Ingredients

Instructions

Step 1: Smash & Cut the Cucumbers

  1. Place cucumbers on a cutting board.
  2. Using a rolling pin or the flat side of a knife, lightly smash them until they split.
  3. Cut into bite-sized chunks.

Step 2: Salt & Drain the Cucumbers

  1. Toss cucumbers with ½ tsp salt in a bowl.
  2. Let sit for 10 minutes to draw out moisture.
  3. Rinse and strain well to remove excess salt.

Step 3: Make the Dressing

  1. In a small bowl, whisk together:
    • Soy sauce
    • Rice vinegar
    • Sesame oil
    • Minced garlic
    • Sugar or honey
    • Chili oil

Step 4: Toss Everything Together

  1. Pour dressing over cucumbers.
