Instructions
Step 1: Smash & Cut the Cucumbers
- Place cucumbers on a cutting board.
- Using a rolling pin or the flat side of a knife, lightly smash them until they split.
- Cut into bite-sized chunks.
Step 2: Salt & Drain the Cucumbers
- Toss cucumbers with ½ tsp salt in a bowl.
- Let sit for 10 minutes to draw out moisture.
- Rinse and strain well to remove excess salt.
Step 3: Make the Dressing
- In a small bowl, whisk together:
