Description
A unique and sophisticated dish that transforms classic crème brûlée into a savory seafood masterpiece. This recipe features tender crab meat, rich custard, and a caramelized sugar topping, creating a luxurious balance of flavors.
Ingredients
- 1 cup fresh crab meat (Dungeness, king, or snow crab)
- 1 cup heavy cream (for a velvety texture)
- 3 large egg yolks (to create a smooth custard)
- ½ teaspoon Old Bay seasoning (for a touch of spice)
- ¼ teaspoon white pepper (for depth of flavor)
- 1 clove garlic, minced (adds a subtle aromatic taste)
- 1 teaspoon lemon zest (to brighten the dish)
- 2 tablespoons sugar (for the caramelized topping)
- ½ teaspoon salt (to enhance the flavors)
- Butter or cooking spray (for greasing ramekins)
Instructions
Step 1: Preheat & Prepare Ramekins
- Preheat the oven to 325°F (165°C).
- Lightly grease 4 small ramekins with butter or cooking spray.
Step 2: Prepare the Crab Meat
- If using fresh crab, remove any shell fragments and shred the meat into small pieces.
- Set aside in a bowl.
Step 3: Make the Custard
- In a mixing bowl, whisk together heavy cream, egg yolks, Old Bay seasoning, white pepper, minced garlic, and lemon zest.
- Whisk until smooth and well combined.
Step 4: Add the Crab & Fill the Ramekins
- Gently fold the shredded crab meat into the custard mixture.
- Divide evenly among the greased ramekins, filling each about ¾ full.
Step 5: Bake in a Water Bath
- Place the filled ramekins into a large baking dish.
- Pour hot water into the baking dish until it reaches halfway up the ramekins.
- Bake for 35-40 minutes, or until the custard is set but slightly jiggly in the center.
Step 6: Cool & Chill
- Remove ramekins from the water bath and let them cool at room temperature.
- Refrigerate for at least 2 hours to allow flavors to develop.
Step 7: Caramelize the Sugar Topping
- Sprinkle a thin layer of sugar over each custard.
- Use a kitchen torch to melt and caramelize the sugar until golden brown.
- Alternatively, broil under high heat for 2-3 minutes, watching carefully to prevent burning.
Step 8: Serve & Enjoy
- Allow the caramelized topping to set for a few minutes before serving.
- Garnish with fresh herbs or extra lemon zest for a gourmet finish.
Notes
- Fresh Crab is Best: If using frozen crab, thaw and drain thoroughly to prevent excess moisture.
- Don’t Overmix: Gently fold the crab into the custard to maintain texture.
- Water Bath is Essential: This prevents the custard from curdling and ensures a smooth, creamy consistency.
- Chill Before Caramelizing: This helps the brûlée set properly and enhances the flavors.
