Description

A crunchy, creamy, and zesty coleslaw perfect for low-carb lifestyles. Great for pairing with grilled meats or as a refreshing standalone side.

Ingredients

  • 4 cups coleslaw mix (cabbage and carrots)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tbsp apple cider vinegar
  • 1 tsp mustard powder
  • 2 tsp horseradish
  • 1 tsp sweetener (like stevia)
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, whisk together mayonnaise, sour cream, vinegar, mustard powder, horseradish, and sweetener until smooth. Add salt and pepper to taste.
  2. In a large bowl, add the coleslaw mix and pour the dressing over the top. Toss until evenly coated.
  3. Cover and refrigerate for at least 30 minutes before serving to let the flavors meld. Serve cold.

Notes

Try adding shredded chicken or sunflower seeds for a protein and crunch boost. Swap mayo and sour cream with plant-based alternatives for a vegan twist.
