Description

Warm, comforting, and low-carb, these keto soups are perfect for meal prep and packed with healthy fats and protein.


Ingredients

  • 2 bone-in chicken thighs (or chicken breasts)
  • 4 cups chicken broth
  • 1 cup cauliflower rice
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 2 cloves garlic, minced
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat some olive oil and sauté garlic, carrots, and celery.
  2. Add chicken thighs and sear for 2-3 minutes per side.
  3. Pour in chicken broth, add bay leaf, and let simmer for 30 minutes.
  4. Remove chicken, shred it, then return it to the pot.
  5. Stir in cauliflower rice, cook for 5 more minutes, and serve hot.

Notes

This soup is great for meal prep. Store leftovers in the fridge for up to 5 days or freeze for longer storage.
