Ingredients
- 2 bone-in chicken thighs (or chicken breasts)
- 4 cups chicken broth
- 1 cup cauliflower rice
- 1 carrot, diced
- 1 celery stalk, diced
- 2 cloves garlic, minced
- 1 bay leaf
- Salt and pepper to taste
Instructions
- In a large pot, heat some olive oil and sauté garlic, carrots, and celery.
- Add chicken thighs and sear for 2-3 minutes per side.
- Pour in chicken broth, add bay leaf, and let simmer for 30 minutes.
- Remove chicken, shred it, then return it to the pot.
- Stir in cauliflower rice, cook for 5 more minutes, and serve hot.
Notes
This soup is great for meal prep. Store leftovers in the fridge for up to 5 days or freeze for longer storage.
