Ingredients

  • 4 large russet potatoes
  • 1 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 egg
  • 1/2 cup milk
  • Oil for frying (peanut, vegetable, or canola)

Instructions

  1. Wash and scrub russet potatoes, then cut into thick wedges.
  2. Soak wedges in cold water for at least 30 minutes to remove excess starch.
  3. In a bowl, mix flour, cornstarch, garlic powder, onion powder, paprika, salt, and black pepper.
  4. In another bowl, whisk together egg and milk.
  5. Drain and pat dry the potatoes.
  6. Dredge wedges in flour mixture, dip in egg wash, then coat again in flour.
  7. Let wedges rest for 5 minutes to set the coating.
  8. Heat oil to 350°F (175°C) and fry in batches for 5-6 minutes until golden brown.
  9. Increase oil temperature to 375°F (190°C) and fry again for 3-4 minutes for extra crispiness.
  10. Drain on a wire rack, season, and serve hot.

Notes

For extra crispiness, let the coated wedges rest for 10 minutes before frying. Fry in batches to maintain oil temperature.
