Recreate the crispy, seasoned KFC potato wedges at home with this simple, flavorful recipe.
Ingredients
- 4 large russet potatoes
- 1 cup all-purpose flour
- 1/4 cup cornstarch
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 egg
- 1/2 cup milk
- Oil for frying (peanut, vegetable, or canola)
Instructions
- Wash and scrub russet potatoes, then cut into thick wedges.
- Soak wedges in cold water for at least 30 minutes to remove excess starch.
- In a bowl, mix flour, cornstarch, garlic powder, onion powder, paprika, salt, and black pepper.
- In another bowl, whisk together egg and milk.
- Drain and pat dry the potatoes.
- Dredge wedges in flour mixture, dip in egg wash, then coat again in flour.
- Let wedges rest for 5 minutes to set the coating.
- Heat oil to 350°F (175°C) and fry in batches for 5-6 minutes until golden brown.
- Increase oil temperature to 375°F (190°C) and fry again for 3-4 minutes for extra crispiness.
- Drain on a wire rack, season, and serve hot.
Notes
For extra crispiness, let the coated wedges rest for 10 minutes before frying. Fry in batches to maintain oil temperature.
