Ingredients
- 1 box strawberry cake mix
- 2 large eggs (room temperature)
- ½ cup vegetable oil (or melted butter for a richer flavor)
- ½ cup white chocolate chips (optional but delicious!)
- Powdered sugar (for rolling, optional)
Instructions
Step 1: Preheat & Prepare
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper or a silicone mat to prevent sticking.
Step 2: Mix the Dough
- In a medium bowl, combine strawberry cake mix, eggs, and oil.
- Mix until fully incorporated— the dough will be thick and sticky.
Step 3: Add Mix-Ins
- Stir in white chocolate chips (or any other mix-ins you prefer).
Step 4: Shape the Cookies
- Roll the dough into 1 to 1½-inch balls using your hands.
- If desired, roll each dough ball in powdered sugar for a crinkle effect.
- Place dough balls on the prepared baking sheet, 2 inches apart.
Step 5: Bake
- Bake for 8-12 minutes until the edges are set and the tops slightly crack.
- Remove from the oven while they still look soft—they’ll firm up as they cool.
Step 6: Cool & Serve
- Let cookies cool on the baking sheet for 5 minutes.
- Transfer to a wire rack to cool completely before serving.
Notes
- Avoid Overbaking: Take them out when the edges are set but the center is slightly soft.
- Adjust Dough Texture: If the dough is too thick, add a teaspoon of oil to loosen it up.
- Room Temperature Ingredients: Helps the dough mix smoothly for even baking.
